Paya Soup

Paya ; literally means limbs of lamb in Urdu language

Ingredients : Onion, whole spices: cinnamon, pepper, cardamom, ginger and garlic paste, salt and limbs of lamb (cleaned and chopped).
Procedure : Take a pressure cooker and put it on slow flame; heat a little oil. Sauté slices of onion and add crushed garlic to it. After they turn light brown, add the whole spices and later the ginger / garlic paste to it. Then add 1 big glass of water and the chopped lamb pieces. Turn the flame into high and cover the lid of the cooker while bringing it to simmer till three whistles blow from it.

Cooking time approximately 20 mins

Garnish with mint leaves and lemon juice if needed. Serve hot and add salt to taste. Works best in rainy and winter season; especially if you have a bad cold, running nose or indigestion. I would say, “Best medicinal remedy prescribed for children, who cannot gulp down tablets.”
